Thursday's Thoughts

I don't have much to talk about, but I am trying to find anything and everything to do rather than my homework. School is kicking my butt and every second I have available is put towards reading, homework or writing papers. BLAH! I wish I would have finished my bachelor's degree back in the day...OH Well..... We got new furniture and I absolutely LOVE it! We are in the process of trying to find a new comforter and decorations so as soon as we do I will post some pictures! Josiah has been awesome lately! Even though this age can be a little challenging by all the temper tantrums I am loving it! He loves to stay busy and he has even been using the bathroom on the potty more lately! I am still not pressuring him but when he tells me he has to go we run to the potty...if he wants too...we will see how long that last! I CANNOT believe Josiah will be 2 in 3 months...this just blows me away... Tomorrow is FRIDAY! I love FRIDAYs! Not only because its the beginning of the weekend, but some of us girls have been trying to get the kids together on Fridays and I love watching Josiah interact with others!! I also love it because Josh has two whole days off with us!!! Woohoo! I guess I really need to get back to my homework....I am ready for this semester to be over and we are only in week 3....

We have had a few busy days! Friday we met some friends at our new favorite place...Chick-fil-a!!!! Friday afternoon Josh got off early and we went to Sam's to buy a few things! We didn't have anything planned but Rach called and we ended up having them over!! We had a great time with her and Bryan!!
Saturday Josh woke up with a sore throat so he we went to the urgent care where they said he might have strep...later that afternoon we went to the beach!!! It was gorgeous! I am so glad that Josiah loves the beach and water!! I am looking foward to many trips this summer! Saturday night Josh went out to eat with some of the guys while I stayed home to clean! We are getting new furniture so we had to clean out one of the other bedrooms to put our old furniture in there! I will post pictures Wednesday.
Sunday I met up with Lindsay and went to brunch at Five Sisters! If you live in Pensacola you have to try this place!!! I had their chicken and waffles! After we ate we went on a much needing shopping trip! I never buy myself anything so it felt good to get some clothes! I only bought Josiah one outfit!
Sunday night we went to mom's for dinner and then I came home and worked on homework!

Chick-fil-a

Last night we met Josh's friend from work, Laura and her son Garrett at Chick-fil-a! We eat there every once in awhile but we have never let Josiah play on the playground. I was always afraid that Josiah would get stuck up there and I would have to go get him. I also thought that he wouldn't do well without me being right by his side...SHOOT...that boy didn't hesitate and had so much fun!!! We will definitely be going back! He is still sleeping so I told Josh if he sleeps in today we are goingto Chick-fil-a every night! HAHA! Here are a few pictures...they aren't the best quality because they are from my phone!

I have to add that Josiah LOVES girls and usually older ones! Well last night a girl (she was probably 6 or 7)came down the slide and then Josiah came down after her and the girl said "he was addicted to me up there!" Haha! Come on Josiah give me a few years before I have to chase off the girls!!! He is so funny!!

FUN!

The past two weeks have been challenging. Josiah was sick and he was showing me a little of the terrible twos but things seem to be looking up and he has been acting a lot better!

Friday Josiah and I got ready and we headed to Roly Poly for lunch with some of the girls! It was really good and I will be going back soon!


After eating lunch we headed downtown to OH SNAP! Last time I wasn't too impressed but this time they had more to choose from and my cupcake was amazing!

Friday night Josh, Josiah and I went over to my parents' house for dinner. We came home and sat on the couch and watched Morning Glory. It was a cute movie but not as good as I thought it was going to be.

Saturday morning we went to Target to buy a birthday gift and a few other things. After Josiah got up from his nap we went and picked up our little cousin Micha and headed to the zoo. I have to add that Josiah LOVES Micha. Ever since the first time Josiah met her he has been inseparable. I am so excited that she is moving here soon!

After the zoo we headed to the beach with Josiah and Micha. I thought Josiah might be afraid of the water but boy was I wrong. If I would have let him he would have been jumping in the water! Hopefully I can get a video uploaded soon of him playing! We headed to Crabs for dinner to celebrate Josh's Uncle's birthday! That place was great!

Sunday we got up and took Josiah to mom and dad's and then we headed to Church. We are taking Josiah next weekend and I am soooo nervous! Sunday afternoon was Miss Presley's birthday party! Josiah had so much fun and Ashley did so good on the decorations. I get the awful mom award because I total forgot my camera! After the birthday party we headed straight over to my aunt and uncle's for our monthly family dinner! Have I said how much I love being so close to my family!!!!!!!!!?!?!?!?

Busy weekend

We had an awesome weekend with friends and family! I have a ton of pictures to post but classes start today so I will have to post them when I have a spare moment! Hope everyone has a good Monday....im tired!!

Caramel Rolls

I still haven't been baking but a few people have asked for my Caramel Rolls recipe...

Ingredients
Dough:
Pillsbury Hot Roll Mix (I think the box calls for an egg and some sugar)

Filling:
Butter
1/2 - 3/4 cup of light brown sugar
2 tsp of Cinnamon

Topping:
4 tbls of unsalted butter
1 1/2 cups of light brown sugar
3 tbls of milk

I use the Pillsbury Hot Roll mix and follow the directions for the Cinnamon rolls on the side.


Preheat the over to 350. After following the directions on the box I roll the dough out on the counter and spread butter all on the dough and then I sprinkle about 1/2 - 3/4 cup of light brown sugar and 2tsp of Cinnamon. I roll up the dough so it looks like this...

Once it is rolled up I use dental floss to cut the dough (this works so much better than trying to cut it with a knife!) I cut about 12 rolls.

I then put the rolls in two different pans. Mix the topping ingredients and then put the topping on all the rolls. Let them cook in the oven for about 25-30 minutes.
When they are nice and golden brown take them out of the oven and flip them over on a plate.
